2007 Dry Gewurztraminer
ABOUT THE WINE We here at Ash Hollow are always trying to convey a since of place and Art Den Hoed’s Vineyard has done it again for us this year, located just north of Sunnyside this site seems an ideal place to grow Gewürztraminer. This is our third year working with this fruit and we continue to learn how to best express the intensity of the site. The grapes were hand picked and whole cluster pressed then allowed to cold settle for twenty-four hours before inoculating the juice. The fermentation took place in a stainless steel tank and was allowed to go completely dry before stopping secondary fermentation. We left the wine on its lees for four months, stirring occasionally, to develop its wonderfully rich mouth feel, then racked and filtered the wine before bottling the wine in late March 2008. The color is like golden lemon-aid with big legs, the aromatics are intense tropical fruit with spicy lemon zest. The palate starts our rich and creamy with a warm comforting appeal of pineapple, a smooth mid palate makes way for a tangy finish that helps make this wine an excellent accompaniment to a wide range of food.
