This Chardonnay follows the tradition of Blackwood Canyon's Collectors Series Chardonnays, requiring at least 10 years of age prior to release for consumption. Reminiscent of the classic, early-1900's Burgundies (to which our Chardonnays are often compared), this Chardonnay is a chameleon, enhancing all foods, from seafood to steak. This wine was barrel-fermented in neutral oak, 'lees'-aged for 8 years, left unfined, then bottle-aged for an extended period of time prior to release.
This Chardonnay should never be chilled, and it should be served as one would serve a red wine, as it is bigger and richer than many red wines available today. At Blackwood Canyon, it is not about the color of the grape - it is about grape quality and extraction of flavor.
